The Story
Antisia makes this for family Sunday dinner. It started as an experiment — replace the marinara with Mild Soul Sauce and see what happens. What happened was that no one asked for the old version again.
The sauce layers into the lasagna differently than tomato. The apple cider vinegar base keeps it from going heavy, the natural sweetness builds across the layers, and the heat from the sauce comes through at the finish. It tastes like someone actually thought about what they were cooking.

This is a make-ahead recipe. Build it the day before, refrigerate overnight, bake the day of. The flavors develop better with time. Leftovers are better than the first serving.

Instructions
- Brown ground meat in a skillet. Drain fat. Add Mr. Levi’s Mild Soul Sauce and stir to combine. Simmer 10 minutes.
- Mix ricotta, egg, salt, and pepper in a bowl until smooth.
- In a 9×13 baking dish: spread a thin layer of the meat-sauce mixture on the bottom.
- Layer: noodles, ricotta mixture, meat sauce, mozzarella. Repeat until ingredients are used. Finish with noodles, remaining sauce, and mozzarella topped with Parmesan.
- Cover tightly with foil. Bake at 375°F for 45 minutes.
- Uncover. Bake another 15 minutes until top is browned and bubbling. Rest 15 minutes before cutting.
